- 200gr 00 flour
- 100gr Almond flour
- 150gr Caster sugar
- 300gr organic Oranges
- 1 pack of instant baking yeast
- 4 medium eggs, room temperature
- 150gr Butter
- Butter for the mold
- 00 Flour for the mold
- Salt
- Icing sugar to decorate (optional)
Instructions
Peel the oranges leaving the white part on. Using a potato peeler could be useful. Ground the skin thinly and cover with water. Take the white part off of the oranges, cut them and blend them.
Separate yolks from egg whites and whip the latter with an electric whisk into a firm foam.
At the same time add the icing sugar gently. Then, add yolks (one by one) and melted butter.
Add orange pulp and grounded skin folding everything nicely. Sift almond and 00 flours and the yeast, too, keep on folding to incorporate everything in a airy and light mixture. Finally add a sprinkle of salt.
Butter and then flour a plum cake mold, and transfer the batter there to bake in pre-warmed oven at 180°C for 45 minutes.
Once baked, let it cool and demould the bread. Sprinkle with icing sugar (optional).
